More from the easy files.

Sometimes i just crave greens and potatoes doused in olive oil--a habit i picked up from my parents. We got some kale just in time to satisfy my craving!


The man friend made himself a heartier meal with seitan, kale, almonds, and chives.


Tomatoes at the store looked good that day, so we picked some up and chopped up some squash, spring onions, eggplant, peppers, etc. and made a very tasty gazpacho (with olive garnish).

Also, tonight was the night that JE and I performed our volunteer duties at the pickup spot, and while I don't have pictures of us doing that, I do have this:
Mr. Bill sweeping up beans--he came to meet us for dinner and we roped him in!!

holy shit amazing.

I was a little worried about the cabbage we'd gotten--not a big cabbage eater, so didn't really know what to do with it. Apparently, people stuff it. So we read a few recipes and concocted a vegetarian one. It was good, but should've been saucier.










Found an amazing recipe for a stir fry with baked tofu and all I can remember is that i think there was coconut milk in the sauce. Hope i can find it again!
